Chocolate Strawberry Sugar Cookie Bruschetta

Chocolate Strawberry Sugar Cookie Bruschetta is one of those recipes that I had to “Play” with. The original recipe called for Cream Cheese, and I have a sensitivity to cow’s Dairy. After a little trial and error, I decided that this is my favorite version!

I’m not going to lie…Cookies are one of my favorite treats all year long. But for holidays and special occasions I like to do things a little fancier. Including cookies! I wanted to do something fun and different for Valentine’s day this year and decided to give this recipe a try.

Getting Started

Chocolate Strawberry Sugar Cookie Bruschetta is great because you can make it anytime of the year for any age group and is sure to impress anyone! Plus there’s several different ways you can make it to fit your tastes. This would also be great for a cookie bar! Don’t be afraid to play with your food, you’ll never know what you will come up with.

Ingredients;

  • I pack of sugar cookie dough
  • 1 cup Strawberries diced
  • Nutella
  • 1 1/2 Tablespoons Sugar
  • Juice of half a Lemon
  • Sweetened Coconut Flakes
  • Optional-Fresh Mint Leaves
  • Optional- Honey

  1. You want to bake the cookies acording to the package directions and then set aside and allow to cool.
  2. Mix together the Strawberries, Sugar and Lemon Juice in a bowl and set aside.
  3. Once the cookies have cooled completely, spread a thin layer of Nutella on the cookies. (or a thick layer, I’m not here to judge!)
  4. Then take about a Tablespoon of the Strawberry mixture on top of each cookie.
  5. Sprinkle some of the coconut flakes on top of that.
  6. Then if using Mint put 1 or 2 on top of the Coconut Flakes.
  7. Carefully drizzle a little of Honey on top.
  8. Then grab your favorite Fine Red Wine and enjoy. (I prefer the Parables in Red Pinot Noir, check it out here.)

This is one of those new recipes that I was excited to make for my family. It was something new and so much fun to make. The look on my girls faces when they took that first bite made me feel so good, and they were so happy!
